Mango Chutney Tuna Salad

I ate this all the time when I was teaching full-time and then not at all when I was pregnant. It is a yummy twist on a lunch time favorite.

Mango Chutney Tuna Salad

  • 2 cans of tuna in spring water
  • 2 T lime juice
  • 1/4 Cup Mango Chutney (I get the Mango-ginger Chutney from Trader Joe's)
  • 1/4 Cup Mayo (make your own, its easy)
  • 1/2 tsp curry powder
Combine all ingredients and enjoy as a sandwich or with pita crackers. :)

    I did less mayo so it wasn't so much dressing. It is really yummy.
    Saw your prediction for when I have the baby- I think you will probably be right. Brian thinks it will be this Thursday but I disagree. Miss you lots friend and will call you on Thursday after my next appt. Thank you for all of your support- you have been great!!!
